Ingredients

2 1/2 lb. lean boneless beef, cut into 1-inch cubes
12 oz. small white onions*
4 large carrots, quartered
6 oz. small mushrooms
3 large ribs celery, chopped
1 1/2 c. tomato juice
1/2 c. dry red wine or water
1/4 c. quick cooking tapioca
1 Tbsp. sugar
2 tsp. salt
2 small bay leaves
1 tsp. dried basil
1/4 tsp. pepper
Preparation

Heat oven to 300\u00b0. Mix all ingredients in a heavy 3-quart ovenproof pot.
Cover and bake for 3 hours or until meat is tender and sauce is thickened.
Stir occasionally while baking.
Remove and discard bay leaf before serving or storing.
