Kidney Bean And Rice Salad - cooking recipe
Ingredients

2 c. cooked long grain rice, chilled (about 3/4 c. uncooked)
1 (15 oz.) can red kidney beans, rinsed and drained
1 medium apple (Granny Smith or Golden Delicious), cored and cut into julienne strips
1 medium avocado, seeded, peeled and chopped (about 1 c.)
1/2 c. chopped red sweet pepper
1/3 c. chopped white or red onion
1/4 c. snipped fresh parsley
1/4 c. bottled Thousand Island salad dressing
salt and pepper
2 Tbsp. olive or salad oil
4 tsp. lemon juice
1 Tbsp. vinegar
1 tsp. prepared mustard
