Microwave Fresh Corn Cheese Quiche - cooking recipe
Ingredients

6 slices bacon
4 ears fresh corn
5 eggs, beaten
1 1/4 c. milk
1/2 c. grated Parmesan cheese
2 Tbsp. chopped pimiento (optional)
1 tsp. salt
1/8 tsp. pepper
1 unbaked 9-inch pastry shell (in a glass pie plate)
paprika
parsley
Preparation

Microwave bacon slices on covered paper plate or dish on High for 5 to 7 minutes or until crisp. Set aside.
Cut corn off cob and set aside. Combine eggs, milk, cheese, pimiento, salt and pepper.
Microwave on Medium 2 to 3 minutes or until heated through. Stir well and add corn.
Pour mixture into the baked pie shell.
Microwave on Medium 13 to 17 minutes or until firm around edges.
Center should be slightly soft, but will firm on standing. Sprinkle top with paprika.
Arrange bacon slices over top and garnish with parsley.
Yields 6 to 8 servings.
