Banamaranath Muffins - cooking recipe

Ingredients
    nonstick vegetable spray
    1 c. whole wheat flour
    1/2 c. amaranth flour
    2 tsp. baking powder
    1/4 tsp. baking soda
    1/2 tsp. cinnamon
    3 Tbsp. margarine
    3 Tbsp. brown sugar
    1 egg
    2 small ripe bananas, mashed (about 1 c.)
    1/4 c. apple juice
    1 Tbsp. finely chopped nuts
Preparation
    Preheat oven to 400\u00b0.
    Spray a 12-cup muffin tin with nonstick vegetable spray.
    Combine the flours, baking powder, baking soda and cinnamon in a bowl.
    Beat together the margarine and sugar until light and fluffy.
    Beat in the egg.
    Mix in dry ingredients alternately with the mashed bananas and apple juice.
    Stir in the nuts.
    Spoon the batter into the muffin cups, filling 2/3 full. Bake for 20 minutes or until golden brown.
    Remove to a wire rack for cooling.
