Marinated Carrots - cooking recipe

Ingredients
    3 bunches fresh carrots
    1 tsp. salt
    3/4 c. vegetable oil
    1/4 c. vinegar
    1 tsp. sugar
    1 tsp. grated onion
    3/4 tsp. salt
    1/4 tsp. paprika
    1/4 tsp. dry mustard
    6 stuffed olives
    2 green onions, chopped
    1 Tbsp. pickle relish
    1 Tbsp. minced parsley
    1/2 tsp. capers
Preparation
    Cut carrots in diagonal slices.
    Cook with 1 teaspoon salt for 10 minutes; cool.
    Combine oil, vinegar, sugar, onion, 3/4 teaspoon salt, paprika and dry mustard; blend in blender.
    To dressing, add olives, onions, relish, parsley and capers.
    Mix and pour over carrots.
    Chill overnight.
    Serves 6 to 8.
