Chocolate Mint Snowcaps - cooking recipe

Ingredients
    1 envelope dessert topping mix
    1/4 tsp. peppermint extract
    1 drop green food coloring
    1 box chocolate fudge pudding mix
Preparation
    Prepare pudding mix according to package directions
    using skim milk.
    Prepare whipped topping according to package directions substituting peppermint for vanilla and using skim milk. Fold 1/2 cup topping and food coloring together.
    Combine remaining whipped topping and pudding.
    Divide pudding into 8 dishes and top with 1 tablespoon colored topping. Freeze up to 2 hours and let set at room temperature for 15 minutes before serving. Serves 8.
