Easy Fanned Potatoes(Microwave) - cooking recipe

Ingredients
    4 medium baking potatoes
    4 Tbsp. chopped fresh parsley or chives
    3 Tbsp. margarine, melted
    1/2 c. grated Cheddar cheese
Preparation
    With a sharp knife, slice potatoes thinly to 1/2-inch from the bottom.
    Place on a microwave tray and brush with melted margarine.
    Sprinkle with chopped parsley or chives.
    Microwave on Full power for 10 minutes, turning tray after 5 minutes. Sprinkle with grated cheese, fanning slices gently with a fork, so that cheese falls in between slices.
    Microwave 6 minutes longer, until tender and cheese is melted.
    Serve as main dish with a salad for light supper.
