Eggplant Sauce - cooking recipe

Ingredients
    1/2 c. salad oil
    1 eggplant, peeled and cut in cubes
    1/2 c. onion, chopped
    1 clove garlic
    2 Tbsp. parsley
    1 can crushed tomatoes
    1 small can tomato paste
    1/2 c. red wine
    1 can mushrooms
    1 tsp. basil
    1 tsp. salt
    1 tsp. sugar
Preparation
    Fry eggplant, onion and garlic together.
    When lightly browned, add the rest of the ingredients and simmer for about 1 hour.
