Rabes - cooking recipe

Ingredients
    2 bunches rabes
    olive oil (cover bottom of pan)
    4 cloves garlic
    red pepper to taste
    black pepper to taste
    1/4 c. white wine
    salt (if desired)
Preparation
    Cut stems, and wash rabes; drain.
    Heat garlic, olive oil and red pepper for about 1 minute on medium heat.
    (Do not burn garlic.)
    Add rabes to oil; cover.
    Add a little water;
    stir rabes every few minutes.
    When they are tender, add white wine. Remove cover and let cook just a few more minutes.
