Red Beans And Sausage With Rice - cooking recipe
Ingredients

1 lb. dried red kidney beans
1 small ham hock
2 c. chopped onion
1 1/2 c. chopped celery
1 1/2 c. chopped green pepper
1/2 c. chopped green onions
1 (8 oz.) can tomato sauce
1 tsp. garlic powder
1 tsp. dried whole oregano
1 tsp. dried whole thyme
1/2 tsp. white pepper
1/2 tsp. ground red pepper
1/2 tsp. black pepper
2 bay leaves
2 to 3 dashes of hot sauce
1 lb. smoked sausage, sliced diagonally into 3/4-inch pieces
hot cooked rice
Preparation

Sort and wash beans; place in a large Dutch oven. Cover with water 2 inches above beans; let soak 8 hours. Drain.
Cover beans with water and add ham hock; bring to a boil.
Cover; reduce heat and simmer 45 minutes.
