Fish-Potato Soup(Psarosoupa) - cooking recipe

Ingredients
    1/2 c. olive oil
    2 medium onions, sliced
    1/2 c. chopped celery
    3 large carrots, cubed
    4 medium potatoes, cubed
    2 c. boiling water
    3 1/2 c. tomatoes (1 large or 2 medium cans)
    3 tsp. salt
    4 oz. white wine
    juice of 1/2 lemon
    1/4 tsp. pepper
    2 Tbsp. chopped parsley
    1 3/4 lb. haddock fillets
Preparation
    Saute onions, celery and carrots in oil until soft.
    Add potatoes, seasonings, water, tomatoes and fish (cut into 3-inch pieces).
    Cover and simmer 25 minutes.
