Carrot-Cheddar Casserole - cooking recipe

Ingredients
    1 lb. carrots, peeled and cut up
    2 Tbsp. oleo
    1 1/2 c. milk
    1 c. shredded Cheddar cheese
    3/4 c. coarsely crushed saltine crackers
    2 well beaten eggs
    1 tsp. salt
Preparation
    Cook carrots in salted water.
    Drain and stir oleo into carrots.
    Mash coarsely with a fork.
    Combine rest of ingredients and put into a casserole.
    Bake at 325\u00b0 until knife comes out clean, 35 to 40 minutes.
    Serves 6.
