Mix 'N Match Squash Casserole - cooking recipe
Ingredients

4 c. cubed summer squash (yellow, zucchini, etc.)
1 c. dry bread crumbs
1/4 c. chopped onion
2 eggs, beaten
1/2 tsp. salt
1 lb. bulk pork sausage, cooked and drained
1/4 c. chopped green peppers
1/2 c. grated Parmesan cheese
1/2 c. milk
Preparation

Place squash and a small amount of water in a large saucepan; cover and cook for 8 to 10 minutes or until tender.
(You may also microwave until tender.)
Drain.
Add all remaining ingredients; mix well.
Transfer to a greased 11 x 7 x 2-inch baking dish. Bake, uncovered, at 325\u00b0 for 30 to 35 minutes.
Yield: 6 to 8 servings.
