Colorado Chile Meat Loaf - cooking recipe
Ingredients

2 Tbsp. olive oil
1 onion, diced
2 tsp. garlic, minced
1 red bell pepper, diced
1 Tbsp. jalapenos, diced
2 Tbsp. chili powder
2 tsp. salt
2 tsp. oregano
2 tsp. ground cumin
1 (28 oz.) can Italian tomatoes
1 1/2 lb. lean ground beef
1/2 lb. pork sausage
1 c. dry bread crumbs
2 eggs
1 c. fresh or frozen whole corn
Preparation

Heat the olive oil and saut onion, garlic, bell pepper, jalapeno, chili powder, salt, oregano and cumin until the vegetables are soft. Add tomatoes and cook 10 minutes.
Cool.
