Eggplant Parmesan - cooking recipe
Ingredients

1 medium eggplant
4 medium tomatoes
1/4 c. butter
1/2 c. chopped onion
2 Tbsp. brown sugar
salt and pepper
oil
1 c. flour
1/2 c. buttered bread crumbs
1/2 lb. sliced Mozzarella
Preparation

Wash and peel eggplant.
Cut into thin slices.
Sprinkle with salt and pepper.
Dip in flour and brown on both sides in small amount of oil.
Drain.
Arrange layers of eggplant and tomato slices in a greased 13 x 9-inch pan.
Sprinkle each layer with onion, butter, sugar, salt and pepper.
End with layer of cheese. Bake at 375\u00b0 for 45 minutes or until tender.
