Vegetable Chili - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 c. finely chopped onions
    2 c. diced celery
    2 c. diced carrots
    1 sweet red pepper, diced
    4 cloves garlic, minced
    2 Tbsp. whole wheat flour
    1 Tbsp. chili powder
    4 c. crushed tomatoes
    1 1/2 c. stock
    1 c. dried red beans, soaked overnight
Preparation
    In a 4-quart pot, heat the oil.
    Add the onions, celery, carrots, peppers and garlic.
    Saute for 5 to 10 minutes, or until tender.
    Stir in the flour and chili powder.
    Add the tomatoes, stock and drained beans.
    Cover and simmer for 30 minutes.
    Remove the lid and simmer 30 minutes, or until the vegetables and beans are tender and the liquid has thickened.
    Serves 4 to 6.
