Black Beans And Rice(Serves 3) - cooking recipe

Ingredients
    1 c. rice, uncooked
    1 (15 oz.) can black beans, undrained
    2 Tbsp. salt-free herb and spice blend
    1/8 tsp. pepper
    1/2 c. (2 oz.) shredded sharp Cheddar cheese
    1 small onion, chopped
    1 tomato, chopped (optional)
Preparation
    Cook rice; set aside.
    Combine
    beans and next 2 ingredients in a saucepan;
    bring
    to
    a boil, stirring constantly. Spoon rice onto platter; pour
    bean
    mixture
    over
    rice.
    Top with cheese, onion and, if desired, tomato.
