Mixed Green Salad(Heart Healthy) - cooking recipe

Ingredients
    1/2 head lettuce
    1/2 red leaf lettuce
    1/2 romaine lettuce
    1/2 curley endive
    1 1/4 tsp. arrowroot
    2 1/2 oz. white vegetable stock
    2 1/2 oz. Port wine (red)
    2 1/2 oz. raspberry vinegar
    2 1/2 oz. olive oil
    salt
    black pepper (ground)
Preparation
    Wash lettuce; drain water and cut into 1-inch pieces. Chill lettuce. Combine arrowroot with enough cold vegetable stock to form a smooth liquid paste. Bring remaining stock to a boil and add the arrowroot slurry. Simmer for 5 minutes. Remove from heat and allow to cool slightly. Add in the remaining ingredients. Pour over mixed greens and serve immediately. Yield: 4 portions.
