Ingredients

2 c. flour
3 1/2 tsp. baking powder
1/4 c. sugar
1 tsp. salt
2 eggs
2 1/8 c. milk
1/4 c. corn oil
Preparation

Combine flour, baking powder, sugar and salt.
Whip eggs in separate bowl and add milk and oil, then blend with dry ingredients.
Pour 1/8 cup per pancake onto hot, lightly greased griddle.
Reduce to medium heat and bake until bubbles appear, then flip and bake until other side is golden.
Serve with warm maple syrup and butter.
