Carrot Tsimmis - cooking recipe

Ingredients
    10 to 12 large carrots, cut into large chunks
    2 medium potatoes, peeled and cubed
    3 yams, peeled and cubed
    1 medium onion, diced
    10 large prunes, pitted and cut in half
    1 clove garlic, crushed
    1/2 c. brown sugar
    1 tsp. salt
    1 tsp. cinnamon
    2 c. orange juice
Preparation
    Place all ingredients into large saucepan.
    Bring to a boil, then reduce heat.
    Simmer over low heat for 1 hour, stirring occasionally.
    If mixture starts to become dry, add 1/2 cup of water at a time.
    Cook until carrots are very soft but not mushy.
