Pat'S Hawaiian Lemon Pie(In Honor Of Little Applecart) - cooking recipe

Ingredients
    1 (8 1/4 oz.) can crushed pineapple, drained
    1/4 c. packed brown sugar
    1/4 c. coconut
    2 Tbsp. butter or margarine, softened
    1 unbaked 9-inch pastry shell
    1 (4-serving size) pkg. regular lemon pudding mix
    1/2 c. sugar
    1 3/4 c. water
    2 slightly beaten egg yolks
    2 Tbsp. lemon juice
    1 Tbsp. butter or margarine
    2 egg whites
    1/4 c. sugar
    toasted coconut (optional)
Preparation
    In a small mixing bowl, stir together pineapple, brown sugar, the 1/4 cup coconut, and the 2 tablespoons butter.
    Mix well. Spread pineapple mixture evenly over the bottom of the pastry shell.
    Cover edge of pastry with foil.
    Bake in a 425\u00b0
    oven for 5 minutes.
    Remove foil.
    Continue baking about 10 minutes more or until golden.
    Cool completely on a wire rack.
