Ingredients

2 1/2 c. flour
4 tsp. baking powder
1 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
3 eggs, separated
1 3/4 c. milk
1/2 c. melted butter
1/2 c. cooked pumpkin
3/4 c. chopped pecans
Preparation

Sift together flour, baking powder, salt, cinnamon, nutmeg and cloves.
Beat egg yolks; combine with milk, butter and pumpkin. Add to dry ingredients.
Beat egg whites until stiff; fold into batter.
Pour mixture onto hot waffle iron; sprinkle each waffle with 3 tablespoons pecans.
Bake until lightly browned (3 minutes).
Serve warm with maple syrup.
Yield: 8 (9-inch) waffles.
