Lo-Cal Vanilla Ice Cream - cooking recipe

Ingredients
    3 egg yolks
    1/2 c. sugar
    2 c. milk
    vanilla extract
Preparation
    In stainless steel or heatproof glass bowl or top of double boiler, beat egg yolks and sugar together until thick and creamy. In a saucepan, scald 1 cup milk, add vanilla and pour over the eggs; mix well.
    Stir slowly and continually over a saucepan of simmering water until thickened slightly, about 10 minutes.
    Remove from heat, pour in remaining milk; cool.
    Pour into ice cream canister.
    Freeze in maker according to directions.
    Makes 4 to 6 servings.
    May double recipe.
