Beans Cubano - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 large green bell pepper, coarsely chopped (1 1/4 c.)
    1 tsp. minced garlic
    2 (16 oz. each) cans black beans, undrained
    1 (4 oz.) jar, sliced pimientos, drained
    3 Tbsp. red wine vinegar
    1/2 tsp. dried oregano
Preparation
    Heat oil in a large skillet.
    Add green pepper and garlic. Cook over medium heat, stirring often, 3 to 5 minutes, until pepper is crisp-tender.
    Stir in remaining ingredients, increase heat and bring to a boil.
    Reduce heat, cover and simmer 5 to 7 minutes, until pepper is tender.
    Serves 4.
