Farmer'S Vegetable Soup - cooking recipe

Ingredients
    2 Tbsp. butter or olive oil
    1 large chopped onion
    2 bunches white part of the leeks, sliced
    2 qt. chicken stock
    3 medium potatoes
    1/2 tsp. tarragon
    1/2 c. chopped parsley
    2 c. nonfat sour cream
Preparation
    In pot, saute onion and leeks until limp.
    Add stock, potatoes and tarragon.
    Cover and simmer for 15 minutes.
    Puree or mash with potato masher.
