Stovies(Scottish Stoved Potatoes) - cooking recipe
Ingredients

6 medium potatoes, peeled and thinly sliced
salt and pepper
1/4 c. canola oil
2 medium onions, peeled and thinly sliced
parsley
stock or water
Preparation

Arrange potatoes and onions in layers in a large, heavy skillet.
Sprinkle each layer with salt, pepper and parsley.
Add oil.
Around edges of skillet, add a cup or so of stock or water. Cover tightly and simmer until potatoes are soft and most of the liquid has been absorbed, about 30 minutes.
If using an electric skillet, cook at about 325\u00b0.
Serves
6 to 8.
