Portuguese Stuffing - cooking recipe

Ingredients
    1/2 loaf Italian bread, soak and squeeze water out
    1 onion, chopped
    1/2 bunch parsley, chopped
    2 tsp. tomato paste
    1/2 c. cider vinegar
    2 eggs
    salt and pepper to taste
Preparation
    Saute onion and parsley in oil.
    Add vinegar, paste, salt and pepper.
    Simmer until blended.
    In bowl, place bread and pour mixture.
    Cool.
    Add 2 eggs, salt and pepper to taste.
    Mix well. Return to hot pan and turn.
    Cool until dry.
    Make sure you can taste vinegar.
    Stuff pork shoulder, turkey, etc.
    Roast/bake as usual.
