Roasted Potato Salad - cooking recipe

1 1/2 lb. red potatoes, cut into 8 wedges each (unpeeled)
1 Tbsp. chopped fresh rosemary
2 tsp. extra virgin olive oil
1 tsp. paprika
1/3 c. mayonnaise
1 Tbsp. balsamic vinegar
1 1/2 tsp. Dijon mustard
1/2 tsp. kosher salt
1/4 tsp. coarsely ground black pepper
1/4 red onion, diced (about 1/2 c.)
1/3 c. chopped Italian parsley
Preparation

Heat oven to 425\u00b0. In a roasting pan coated with cooking spray, toss potatoes with rosemary, olive oil and paprika until all sides are coated well with spices. Roast approximately 40 minutes, turning occasionally, until tender. Let cool to room temperature. In large bowl, whisk together mayonnaise, vinegar, mustard, salt and pepper. Add potatoes, onion and parsley. Toss to combine.
