Ingredients

2 c. flour
2 tsp. baking powder
1/2 tsp. salt
2/3 c. shortening
1 1/4 c. white sugar
1/2 tsp. vanilla
1/2 tsp. almond extract
1 egg
3/4 c. drained crushed pineapple
1/2 c. coconut
Preparation

Combine dry ingredients; set aside.
Cream shortening and sugar.
Add egg, vanilla and almond extract.
Add coconut and pineapple, then mix in the dry ingredients.
Drop by teaspoon on an ungreased cookie sheet about 3 inches apart.
Bake at 325\u00b0 for 20 minutes.
Makes 3 1/2 dozen.
