Raisin Oatmeal Cookies - cooking recipe

1 c. all-purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. solid margarine, softened (1 stick)
2 Tbsp. granulated fructose
1 large egg
1 tsp. vanilla extract
1 c. granulated sugar replacement or 1/8 tsp. Stevia Rebaudiana extract
1 1/4 c. quick cooking oatmeal
1/2 c. raisins
Preparation

Combine flour, cinnamon, baking powder, baking soda and salt in a bowl.
Stir to mix.
Combine margarine, fructose, egg and vanilla in a mixing bowl.
Beat until thoroughly blended.
Beat in sweetener of your choice.
Gradually add flour mixture.
Beat until blended.
Meanwhile, combine oatmeal and raisins in a bowl. Work with your fingers or a spoon to separate the raisins and coat them with the oatmeal.
Beat into cookie mixture.
Drop by tablespoonfuls onto an ungreased cookie sheet.
Bake at 375\u00b0 (190\u00b0C) for 10 to 12 minutes.
Cool slightly on cookie sheet, then move to cooling rack.
