Fried Artichokes - cooking recipe

Ingredients
    very small artichokes
    salt
    water
    1 beaten egg
    cracker crumbs
Preparation
    Use very small artichokes;
    the heart shouldn't be more than an
    inch
    in diameter.
    Peel them.
    Take all outer leaves off until
    you
    have
    tender leaves.
    Cut off the prickly top. Parboil in
    salt and water for 15 minutes.
    Drain, standing on leaf end so all water will drain out.
    Slice lengthwise into 4 pieces.
    Dip in
    beaten
    egg
    and cracker crumbs.
    Fry in oil until tender. Serve with mayonnaise.
