    1 tsp. vegetable oil
    1 small onion, chopped fine
    1 whole garlic clove
    1 lb. ground turkey
    2 tsp. chili powder
    1/2 tsp. cayenne pepper
    1 1/2 tsp. dried oregano
    1 Tbsp. vinegar
    1/3 c. plain nonfat yogurt
    1/2 tsp. cumin
1 (15 oz.) can black beans, rinsed and drained
1 (12 oz.) jar mild or medium hot salsa
    3/4 c. chicken broth
8 Aztec flour tortillas, cut into 1-inch strips
1/2 c. shredded reduced fat Monterey Jack cheese
Preparation
    Heat oven to 325\u00b0.
Heat oil over medium heat in a large nonstick skillet.
Cook onion and garlic until softened, about 5 minutes.
Add turkey, chili powder, cumin, cayenne pepper, oregano and vinegar.
Cook until turkey is no longer pink.
Stir in black beans and remove from heat.
Combine salsa and chicken broth; spread a thin layer of salsa mix in bottom of a 2-quart baking dish.
Top with 1/2 of tortilla strips, half of turkey mix and 1/2 of remaining salsa mix.
Repeat layers and sprinkle with cheese. Bake until bubbly hot, about 25 minutes, or microwave on 70% power for 15 minutes.
Top each serving with a spoon of yogurt.
