Lemon Meringue Pie(9-Inch) - cooking recipe

1 1/2 c. sugar
1/3 c. cornstarch
1 1/2 c. water
3 eggs
3 Tbsp. butter or oleo
4 Tbsp. lemon juice
1 1/3 Tbsp. grated lemon rind
1 baked pie crust
Preparation

Mix in saucepan the sugar, cornstarch and water. Cook over moderate heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Slowly stir half of the hot mixture into 3 slightly beaten egg yolks. Then beat into hot mixture in saucepan. Boil 1 minute longer, stirring constantly. Remove from heat. Continue stirring until smooth.
Blend in butter, lemon juice and rind. Pour into baked pie shell.
