Open-Face Pita Sandwich - cooking recipe

Ingredients
    8 oz. sun-dried tomatoes in oil, drained (1 Tbsp. oil reserved)
    1 lb. boneless, skinless chicken breast halves, cut into about 1/2-inch pieces
    1/4 tsp. Italian seasoning
    1 small onion, thinly sliced
    1/4 c. grated Parmesan cheese
    2 whole wheat pita pockets
    1/2 c. shredded Mozzarella cheese
Preparation
    Heat oven to 375\u00b0.
    Cut tomatoes into 1/4-inch strips.
    Heat reserved 1 tablespoon oil in 10-inch skillet over medium-high heat until hot.
    Cook chicken, Italian seasoning and onion in oil about 4 minutes, stirring frequently, until chicken is no longer pink in center.
    Stir in tomatoes and Parmesan cheese.
