Italian Bean Soup - cooking recipe

Ingredients
    1/4 lb. ham, in 1/2-inch pieces
    2 carrots, sliced
    1 onion, chopped
    1 zucchini, diced
    30 to 40 oz. can white beans, rinsed
    1 Tbsp. olive oil
    1/2 tsp. basil
    15 oz. tomatoes
    14 oz. chicken broth
    10 oz. frozen spinach, thawed and drained
    grated Parmesan
Preparation
    Remove 1 1/2 cups beans and mash smooth.
    Set aside.
    In a large pan, in oil, cook ham, vegetables and spices until vegetables are tender and begin to brown. Add tomatoes, broth, spinach and mashed beans.
    Heat to boiling, then simmer 15 minutes. Add whole beans and heat through.
    Sprinkle each bowl with grated Parmesan.
