Black-Eyed Peas And Brown Rice(New Years) - cooking recipe

Ingredients
    2 cans peas, drained
    1/2 c. onion, chopped
    1/2 lb. lean ham, cut in strips or cubed
    1 clove garlic
    3 Tbsp. white wine vinegar
    3 Tbsp. pickled jalapeno pepper, minced
    1/3 c. vegetable oil
    3 Tbsp. lemon juice
    1 1/2 c. green onions, chopped
    1 1/2 c. brown rice, uncooked
Preparation
    Cook peas, onion, ham and garlic together for 10 or 15 minutes.
    Whisk vinegar and jalapeno pepper together and add the oil slowly in a stream and whisk until mixed.
    Add oil mixture to the pea mixture.
    Stir in the lemon juice and green onions; salt and pepper.
    Marinate for at least 1 hour, stirring occasionally. (This will keep for many days refrigerated.)
