Chicken Livers With Spinach, Mushrooms And Cheddar Cheese - cooking recipe

Ingredients
    3 Tbsp. butter
    3 Tbsp. flour
    1 tsp. dry mustard
    1/2 tsp. salt (optional)
    1 1/2 c. milk
    1 c. (4 oz.) shredded Cheddar cheese
    1 1/2 lb. fresh spinach or 1 (10 oz.) pkg. frozen
    1/4 c. flour
    salt (optional)
    pepper
    1 lb. chicken livers
    1/4 c. (1/2 stick) butter
    4 oz. fresh mushrooms
Preparation
    Melt 3 tablespoons butter in medium size saucepan.
    Stir in 3 tablespoons flour, mustard and 1/2 teaspoon salt.
    Cook until smooth, stirring constantly.
    Remove from heat.
    Gradually stir in milk.
    Bring to boil over medium heat, stirring constantly.
    Boil and stir 1 minute.
    Add cheese; stir until melted.
    (Keep warm.)
