Savory Tomato Soup - cooking recipe

Ingredients
    1 orange
    2 Tbsp. extra virgin olive oil
    3 medium onions, sliced
    6 garlic cloves, chopped
    1 1/2 Tbsp. dried basil, crumbled
    1 1/2 Tbsp. dried marjoram, crumbled
    1 1/2 tsp. ground cumin
    1/4 tsp. dried crushed red pepper
    1 (28 oz.) can peeled tomatoes (undrained)
    1 (16 oz.) can peeled tomatoes (undrained)
    3 c. chicken stock or canned broth
    salt and pepper
Preparation
    Using vegetable peeler, remove peel (orange part only) from orange.
    Reserve fruit for another use.
    Heat oil in heavy 3-quart saucepan over medium heat.
    Add orange peel, onions and garlic. Cover and cook until onions are tender and golden, stirring occasionally, about 30 minutes.
    Stir in herbs, cumin and crushed red pepper.
    Cook until cumin is fragrant about 15 minutes.
    Add tomatoes with their juices and stock; bring to a boil.
    Reduce heat.
    Cover and simmer 20 minutes.
    Cool slightly.
    Puree soup in batches.
    Return to saucepan.
    Season to taste.
