Speedy Strawberry Smoothies - cooking recipe
Ingredients

2 envelopes unflavored gelatin
2 to 3 drops red food coloring (optional)
1 1/2 c. ice cubes (about 6 cubes)
1 c. fresh or frozen strawberries
1 c. (8 oz.) strawberry flavored yogurt
fresh strawberries (optional)
1/4 c. cold water
1/4 c. boiling water
4 eggs
1/2 c. sugar
1/2 tsp. salt
mint leaves (optional)
Preparation

In a 5 cup blender container, sprinkle gelatin over cold water. Let stand 3 to 4 minutes.
Add boiling water and blend at low speed until gelatin is completely dissolved, about 2 minutes.
Add 1 cup strawberries and blend at high speed until pureed.
Add eggs, yogurt, sugar, salt and food coloring, if desired.
Blend at high speed, adding ice cubes one at a time until ice is crushed.
Pour about 1/2 cup into each of 8 dessert dishes or 8 custard cups. Chill until set, about 15 minutes.
Garnish with fresh strawberries and mint leaves, if desired.
