California Zucchini Bake - cooking recipe
Ingredients

1 lb. very lean ground beef
3 medium zucchini, sliced thin
1/4 c. sliced green onions with tops
2 tsp. salt
2 tsp. chili powder
3 c. cooked rice
2 c. shredded Jack cheese
1/4 tsp. garlic powder
1 (7 oz.) can green chiles, chopped
1 c. sour cream
1 large tomato, sliced
Preparation

Saute beef, zucchini, onions, garlic powder and chili powder in a lightly greased skillet until vegetables are tender, but still crisp, stirring frequently.
Add green chiles, rice, sour cream and 1 cup Jack cheese.
Turn into a greased shallow 2-quart casserole dish.
Arrange tomato slices on top and top with remaining 1 cup cheese.
Bake in a preheated 350\u00b0 oven for 20 to 25 minutes.
Makes 6 to 8 servings.
