Ingredients

1 c. raisins
2 c. skim milk
1 pkg. sugar-free vanilla instant pudding mix
2 c. cooked rice (cooked without salt or fat)
1 (20 oz.) can unsweetened crushed pineapple, drained
3/4 tsp. ground cinnamon
Preparation

In small saucepan, put raisins and water to cover. Bring to a boil. Remove from heat.
Cover and let stand 10 minutes. Drain. Combine skim milk and pudding mix in a large bowl. Stir with a wire whisk 2 minutes or until thickened. Add rice, pineapple, raisins and cinnamon. Stir well. Cover and chill.
Yields 7 servings (3/4 cup).
