Ingredients

3 egg yolks
1/8 tsp. salt
1/2 c. sugar
3 egg whites
1/4 c. fresh lemon juice
1 c. whipped cream (real whipping cream)
3/4 c. crushed vanilla wafers
Preparation

Beat egg yolks, salt and sugar in top of double boiler.
Stir in lemon juice and cook over boiling water until mixture coats spoon.
Remove from heat and chill.
Beat egg whites until stiff and fold into cooked mixture, then fold in whipped cream. Sprinkle vanilla wafer crumbs in freezing tray or small pie pan and top with lemon mixture.
Freeze firm.
Double recipe for larger pie.
