Pumpkin Cake Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1 c. chopped walnuts
Preparation

Beat eggs on high speed of mixer for 5 minutes.
Gradually beat in sugar.
Stir in pumpkin and lemon juice.
Combine dry ingredients and fold into first mixture.
Spread on greased and floured pan, 15 x 10 x 1-inch.
Top with walnuts.
Bake at 375\u00b0 in preheated oven for 15 minutes.
Turn out on tea towel that has been sprinkled with powdered sugar (spread with hand).
Starting at the narrow end, roll towel and cake together.
Cool in refrigerator.
