Apricot Whipped Cream Pie - cooking recipe

Ingredients
    1 1/2 c. dried apricots
    1/2 c. water
    1 Tbsp. tapioca
    1 c. sugar
    1 baked pastry shell
    1/2 c. toasted coconut
    whipped cream (for top of pie)
Preparation
    Wash apricots and cook in water about 20 minutes.
    Add tapioca and cook until clear, then add sugar and cook until thick.
    Remove from heat and chill.
    Pour into baked pastry shell and cover with whipped cream and top with toasted coconut.
