Baja Fish And Rice - cooking recipe

Ingredients
    3/4 c. chopped onion
    1/2 c. chopped celery
    1 clove garlic, minced
    3 Tbsp. vegetable oil
    1/2 c. uncooked rice
    2 (14.5 oz.) cans stewed tomatoes, cut up with juice
    1 tsp. lemon pepper seasoning
    1/2 tsp. salt
    1/8 tsp. ground red pepper
    1 lb. fish fillets
    1/4 c. chopped fresh parsley
Preparation
    Cook and stir onion, celery and garlic in oil in large skillet over medium heat until tender.
    Add uncooked rice; cook and stir about 5 minutes or until rice browns slightly.
    Add tomatoes and juice, lemon pepper, salt and red pepper.
