Lemon Cake Pie - cooking recipe

pastry for 1-crust pie
1 1/2 c. sugar
5 Tbsp. lemon juice
2 Tbsp. melted butter
3 eggs, separated
1/3 c. flour
1 1/4 c. milk
1/4 tsp. salt
1/2 tsp. grated lemon peel
Preparation

Line a 9-inch pie pan with pastry and flute edges.
Mix together sugar, butter, flour, salt, lemon peel and juice.
Beat egg yolks.
Combine with milk.
Stir in lemon mix.
Beat egg whites until stiff.
Fold into lemon mixture.
Place in crust. Bake on lowest shelf at 375\u00b0 for 45 to 55 minutes, until top is richly brown and set when lightly touched.
Serve at room temperature or chill as long as 6 hours.
Serves 6.
