South Louisiana Red Beans - cooking recipe

Ingredients
    1 lb. red kidney beans
    ham bone with generous amount meat
    1 lb. smoked sausage
    1 bay leaf
    dash of red pepper
    1 large onion
    1 clove garlic
Preparation
    Wash beans and cover in cold water and soak overnight.
    Cook sausage and garlic until browned.
    Add beans and water in which they have been soaked, then ham bone and more water to cover, bay leaf and red pepper to taste. Cook slowly for several hours. Serves 8.
    Serve over rice.
    Cornbread goes well with red beans. Remove bay leaf before serving.
