Shrimp Fried Rice - cooking recipe

Ingredients
    1 c. cooked shrimp
    2 eggs
    1 c. fresh mushrooms
    1/4 c. scallions
    1 tsp. ginger
    4 c. cold cooked rice
    2 Tbsp. oil plus 2 to 3 Tbsp. oil
    1 1/2 Tbsp. soy sauce
    1/2 tsp. salt
Preparation
    Precook rice and let cool in refrigerator overnight if possible.
    Dice cooked shrimp.
    Slice mushrooms.
    Slice scallions. Beat eggs. Break up and separate rice.
