Pineapple Chicken Stir-Fry - cooking recipe

Ingredients
    1 lb. chicken
    1 Tbsp. cornstarch
    1 tsp. salt
    2 tsp. cold water
    1 Tbsp. soy sauce
    1 1/2 c. sliced onion
    1 sliced red or green pepper
    3 Tbsp. oil
    1 c. sliced celery
    10 sliced water chestnuts
    10 oz. can pineapple chunks
    4 Tbsp. pineapple juice
Preparation
    Preheat oil.
    Cook on high.
    Cut chicken into bite size pieces.
    Mix cornstarch, salt, water and soy sauce.
    Dredge chicken; set aside.
    Saute onion 2 minutes in 1 tablespoon oil. Remove from pan.
    Saute celery and pepper in 1 tablespoon of oil for 1 1/2 minutes.
    Add water chestnuts for 30 seconds.
    Remove from pan.
    Stir-fry chicken in 2 tablespoons oil until brown. Return vegetables to pan.
    Add pineapple; stir to mix.
    Add juice and simmer until heated.
    Serve with rice.
