Cream Of Broccoli Soup - cooking recipe

Ingredients
    2 Tbsp. butter, melted
    1 medium onion, chopped
    1/2 c. butter, melted
    1/2 c. flour
    1 qt. half and half or 1 qt. milk
    1 qt. chicken stock (fresh or from bouillon)
    1 lb. fresh broccoli, chopped
    2 c. carrots, julienned
    salt and pepper to taste
    1 c. heavy cream
    1/2 tsp. nutmeg
Preparation
    Saute onion in 2 tablespoons butter.
    Set aside.
    Cook butter and flour over medium heat for 3 to 5 minutes.
    Add the half and half, slowly, stirring with a whisk.
    Add chicken stock and simmer for 30 minutes.
    Add broccoli, carrots and onions.
    Cook over low heat about 20 to 25 minutes or until flavors have blended and carrots are tender.
    Add salt and pepper to taste.
    Add heavy cream and nutmeg just before serving.
    Serves 10 to 12.
